Edna's Delicious Vegan Recipes
Edna is not one to prepare the same dish twice, nor is she
one to follow recipes, but is ever inventing new variations and combinations
that are nearly always amazingly delicious and nutritious. It is hard to
get her to write down a recipe, but this is a start.
Recipes:
Ingredients
1 pound asparagus
1-1/4 Tbsp of lemon juice
or juice of one fresh lemon
1 clove of garlic |
2 Tbsp olive Oil
2-4 Tbsp Bragg's liquid amino
1/2 Tbsp oregano
1 Tbsp basil |
Directions:
Combine oregano, basil with Bragg's liquid amino and let sit while
preparing the remainder of the dish. Snap off brittle ends of
asparagus, using the tender part for this dish and saving the harder ends
for another dish (e.g. a soup). Microwave or steam asparagus until
tender -- cook for long time if tough. Combine ingredients and serve
hot/warm.
Recommended Complement
Garlic French bread is great for sopping up the sauce.
Ingredients
1 1/2 stock Broccoli
Ghee or olive oil
Whole onion
1 Tbsp olive oil
2 veg. bullion cubes (e.g. onion)
2-3 Tbsp flour
3/4 cup TVP
1/3 to 1/4 cup non-dairy creamer |
1 tsp turmeric
1 Tbsp nutritional yeast
1 Tbsp curry
1 Tbsp Bragg's liquid amino
1 tsp lemon pepper
garlic salt
opt. garlic clove |
Directions:
Steam the broccoli, then sate along with onion in ghee or olive
oil. Add 1 liter of water, flour and TVP. Get hot, then add
non-dairy creamer, curry, turmeric, nutritional yeast, veg. bullion
cubes. Flavor with garlic salt, Braggs liquid amino, lemon pepper.
Ingredients
1/2-bunch Spinach
5 cloves Garlic
2 Tbsp Olive Oil
hand-full Wild Mustard (or dry)
Avocado (optional)
Directions:
Blend ingredients, use as sandwich spread, cracker/chip dip.
Avocado can be blended in or added in chunks.
Take ripe bananas with spots (the kind that are on regularly on sale in
bulk at the grocery store), but not overly ripe. Peel and run finger
from one end to the other through the middle of the banana, which will split
it naturally into three strips. Roll strips in lemon juice, e.g. in a
pie tin. Set out on drying/dehydrating rack. Dry/dehydrate until
chewy but not sticky. Will last for years (if no one knows where they
are, in which case they may last a few days).
